The following recipe is a traditional cheese pie from the region of Ipiros (Ηπειρος), in Greece.

Having busy mums in mind it’s an extremely easy  (only four ingredients needed) and fast, delicious snack/meal perfect for lunch boxes, after games snacks or even for breakfast.

300g plain flour
1 egg
500ml milk (wouldnt recommend substitutes)
250g feta cheese


Preheat the oven to 220C.

Mix the egg, milk and flour in a bowl.

Coat a tin with butter and put it in the oven to warm up until the butter begins to sizzle.

(At this point, if you want you can add extra ingredients such as Bacon cubes and/or chopped veggies).

Pour the mix from your bowl into the tin (and over any extra ingredients you might have added).

Crush the feta cheese with your fingers and spread all over the mix.

Sprinkle small pieces of butter on the surface to help make a nice crust.

Bake at 200C for 40 minutes.

When ready you should have a golden pie; crispy on the outside and soft on the inside.

The pie should be thin and come out from the tin with ease.
