If like our family you’ve a spectrum of dietary requirements sweet tortilla roll ups are the perfect solution for everyones lunch box.  The premise is the same, no matter the filling; fill, wrap & cut into sushi sized rolls.

Filling Suggestion

1)APPLE, RAISIN & CINNAMON

For this vegan friendly option use Corn flour tortillas to also make it gluten & nut free (make sure to also check the suppliers notes on allergies).

Ingredients

  • For up to 4 tortillas
  • 1.5 grated apples
  • 1 tea spoon of brown sugar
  • 1/2 tea spoon of cinnamon
  • A handful of raisins

2)BANANA, HONEY & PEANUT BUTTER

For this option we find whole wheat ( a good source of dietary fibre) tortillas go best.  A good dairy free choice.

Ingredients

  • For up to 4 tortillas
  • 1.5 ripened bananas, mashed
  • Whole Earth Peanut butter (crunchy, organic & palm oil free)
  • Honey (up the stakes and go Manuka)

3)RICOTTA & VANILLA

A simple but luxuriously tasting filling.

Ingredients

  • For up to 4 tortillas
  • 100g of Ricotta cheese
  • 1/2 a vanilla pod

4)SUMMER BERRIES & SWEET AVOCADO CREAM

Chop & change this option to be vegan or non vegan.  The berries in this make it a perfect immune system booster and depending on whether you use sugar or honey this roll up is low in calories and so perfect for anyone on a diet and in need of a high energy low calorie snack.

Ingredients

  • For up to 4 tortillas
  • 1 avocado
  • 2 large spoons of Greek yogurt (or 2 Table spoons of almond milk)
  • 2 table spoons of honey (or icing sugar)
  • A handful of blueberries
  • A handful of raspberries

 Instructions

FILLING 1:

  • Grate the apples
  • Add sugar and mix until the sugar has melted into the juice of the grated apple
  • Drain off all the excess fluid/juice
  • Season with the cinnamon
  • Add raisins and mix one last time.
  • Spread (thin & evenly) on to the tortillas
  • Roll up tortillas into cylinders (not burritos) and cut into fours.

FILLING 2:

  • Mix the mashed banana with 4 table spoons of peanut butter
  • Spread the mix on to the tortillas
  • Drizzle with honey
  • Roll up tortillas into cylinders (not burritos) and cut into fours.

FILLING 3:

  • Scrape out the contents of half a vanilla pod and mix into the ricotta
  • Add a tea spoon of icing sugar and continue to mix
  • Spread (thin & evenly) on to the tortillas
  • Roll up tortillas into cylinders (not burritos) and cut into fours.

FILLING 4:

  • Mash the avocado and mix into the Greek yogurt or Almond milk
  • Add sugar (or honey) and mix until the sugar has melted into the mix
  • Spread (thin & evenly) on to the tortillas
  • Scatter a mix of the berries on top
  • Roll up tortillas into cylinders (not burritos) and cut into fours.
