Energy Boosting: Antioxidant Salad

In case you’d not yet guessed I’m salad mad! We have salad with everything. This energy boosting salad is packed with antioxidants making it the perfect mum-chow! If that’s not enough it’s also high in Vit C, Folic, Iron and fibre. So, whether you’re pregnant, breastfeeding or just feeling run down; get tossing!

INGREDIENTS:

To make this energy boosting salad you will need:

•3 Spring Onions

•Spinach (1 handful per person)

•1 Grated apple

•The juice of 1 lemon and from the grated apple

•1 cup of pomegranate

•1 handful of 1/4’d grapes

•Crushed blueberries (1 handful per person)

•Tomato

•Salt

•Olive oil

Serving Suggestion

Normally when I’m craving this salad it’s because my energy levels are low and I need a boost. It also means I seriously can’t be arsed with doing anything full on. So, I’ll normally just chuck something basic and filling like Quorn nuggets in the oven. Which also helps to keep the calorie levels down too; but really who’s counting? Although, does mean more room for cake!

Method

Simply layer up your ingredients into a bowl and mix them all together, evenly. Make sure that everything mixes well and all the leaves are coated in the juice of all the fruit. Then season with a pinch of salt and a dash of extra virgin, Greek olive oil.

I know I say it every time, but it really is that simple. The hardest part of to making a good salad is pulling together the right combination of ingredients and flavours.
