Naked Burrito: Weaning Friendly

Right, I don’t know about you but, tea time in our house is a bit of a mission to say the very least! Burritos, naked or wrapped suit everyone. We need meals that will cover a plethora of needs and tastes. And they’re extremely weaning friendly.

So, I’m currently breast feeding. Which means I need high energy, super foods. Yianni is working long hours and is a picky eater. He tends to want comfort food. Dishes that can hug away the stress of a working day. Then there’s the toddler. Constantly hungry but equally repelled by food. Finally, 8 month old P, who’s just starting her journey into food exploration. The best bet for pleasing us all? Burritos! Every time! As we can all eat them differently.

How Do You Eat Yours?

I like mine naked. No, not in the duff. Piled up in a bowl without any kind of wrap or bread. A great low calorie option and means you can pack in a bigger portion! Yiannis likes his the traditional way, wrapped in a tortilla. Theon likes to pick and rip bits of tortilla to do ‘dippy dippy’. Cucumber, dip. Tortilla, dip and so on. But with P, I tend to give her as many dry bits to man handle and smoosh into her face as possible. Her favourites being the grilled peppers and onions onions, tortilla, rice, cucumber and grated cheese.

Grilled Veg

•Red onion (unseasoned)

•Red Pepper (unseasoned)

•Mushrooms (dressed in balsamic vinegar)

Guacamole

•3x ripe avocados, peeled, de-stoned and mashed

•The juice of 1/2 a lemon

•1x finely chopped clove of garlic

•A handful of finely chopped coriander

Mix through evenly with a fork, other wise it may turn brown while you prep the rest of your dish!

Sour Cream

Our favourite is Yeo Valley

Take out the sour cream for a fully vegan option.

Salsa

•3x Grated tomatoes

•4x chopped spring onions

•The juice of 1/2 a lemon

•1x finely chopped clove of garlic

•A handful of finely chopped coriander

•1 pinch of salt

Mixed all the ingredients through with a fork and leave to sit in the fridge for 30 mins before eating

Quick Bean Chilli

•1x table spoon of paprika

•1x tea spoon of chilli

•1x finely chopped onion, 1x finely chopped clove of garlic

Added to

•1x tin of black eyed beans

•1x tin of kidney beans

All cooked together in tomato pasata with a splash of oil

Rice

My tip would be to go for a ready made, packet rice like Uncle Ben’s Mexican rice.

Salad

•Sliced cucumber

•Shredded lettuce

Serving Suggestion

•Grated cheese

•Shredded pork or beef

•Grilled chicken or quorn fillets

•Tortillas

•Cholula chilli sauce

Not only the perfect veggie option, burritos also make for a great banquet dinner. Easy to prep and please, for when friends and family are over. Why not up you game and add in some refreshments. Our recommendations are:

•Shandy with a shot of Tequilla

•Lemonade

•Corona with a wedge of lime
