One Dish: Mixed Grill

A quick, easy and versatile dish on a budget, which also contains all of your five a day!

Ingredients:
(To serve 5: budgeted at £1.60pp)

  • 1 onion
  • Handful of baby plum tomatoes
  • 100g Salami
  • 5 sausages
  • 5 frozen corn cob halves
  • 10 frozen king prawns
  • 1 head of brocoli
  • 1 clove of garlic
  • 2 lemons

Instructions:

  • Quarter an onion and chuck it into a casserole dish
  • Half your tomatoes and add to the onion
  • Add the sausages
  • Slice up the salami and scatter over the top
  • Add your corn on the cob portions
  • Drizzle with olive oil, season sparingly with salt and pepper (as the salami is already well seasoned)
  • Add 1/3 of a mug of water and the juice of 1 squeezed lemon
  • Put into a preheated oven at 200 degC for 20-30 mins or until the juices have begun to bubble
  • Chop your broccoli into florets and add to the casserole dish, making sure to toss them into the existing ingredients and covering them with sauce/juice
  • Wash your king prawns and place them on top
  • Drizzle with some more olive oil and the juice of half a squeezed lemon
  • Put back into the oven for another 25-30 mins making sure to mix all the ingredients every 10-15 mins to stop them from becoming over cooked on one side and allowing the juices from the dish to cover and steam all of the meat and veg
  • Once ready allow to rest for five mins before squeezing the remaining 1/2 lemon over the top before serving

Serving Suggestion:

  • This dish can easily be amended to suit both vegans and vegetarians by removing the meat and substituting for veggie sausages and sweet potatoes
  • Go pescatarian and remove the sausages and salami and replace with kalamari
  • We served our grill with garlic bread and rainbow relish.  to make your own relish simply shred carrot, red cabbage and beetroot and dress with lemon juice, balsamic vinegar and mayonnaise
