Oat Loaf Recipe

Some times all you want in life is a snack (no matter the guilty pleasure) that can hug you from the inside out.  Our Apple & Ginger Oat Loaf is ideal for warming those waning autumn nights or even just as an afternoon snack to see you through to tea.

PREP TIME:

20-30 MINUTES

COOK TIME:

40-50 mins

Ingredients

  • 3 Apples
  • 1 Banana
  • 6 x Table spoon of Ginger
  • 1 x Table spoon of Nutmeg
  • 1/6 Tea spoon of baking soda
  • 1.5 Eggs
  • 3 cups of Oats
  • 1 cup of all purpose flour
  • 1 pinch of salt
  • 3 x Table spoons of olive oil
  • 1 cup of brown sugar

Instructions

  • Preheat your oven to 180°c  or 380°f
  • Finely dice your apples and mash your banana and add to your mixing bowl
  • To the apple and banana add all your wet mix (egg & oil) and mix
  • In a separate bowl sieve in all your dry ingredients
  • Slowly mix your dry ingredients into your wet mix until you have an even looking wet batter
  • Oil a loaf tin
  • Poor in your batter
  • Put into the oven for 40-50 mins, or until golden brown
  • To test that it has cooked through use a metal kebab skewer and pierce the middle of the loaf, when the skewer pulls out clean they loaf is cooked.

Serving Suggestions

  • Great with a cup of spiced latte
  • Or toasted with butter
